Better!

I feel better! Well, a little better. Enough to celebrate with a lovely brunch, at any rate.

And maybe it was at 2pm. And maybe we had panceggs. What are panceggs, you ask? They are eggs and pancakes fused together to make something even more awesome than either eggs or pancakes.

Ingredients
(serves 2 hungry people)

Pancake portion:
1 1/3 cup flour
2 tbsp sugar
2 tsp baking powder
2 eggs
1 tsp melted butter or oil
3/4 cup milk
pinch of salt

Egg portion:
4 eggs
butter for the pan

Combine the dry pancake ingredients in a bowl and stir. Make a hole in the center and pour in the eggs, milk and butter (or oil). Mix until the batter is lumpy but not clumpy.

Melt some butter in a pan on medium heat. Pour a 1/4 cup of the batter in, forming a pancake. When there are big bubbles all over the top, pick it up with a spatula. This is where having a partner can come in handy. Crack an egg into the pan. Put the pancake on top of the egg, cooked side UP. Make sure the yolk doesn't slip out from under it. Use the spatula to keep everything pancake shaped. When the egg is cooked, remove the pancegg and repeat. Serve with heated maple syrup. And maybe bacon.
